Pisco Sour

A traditional cocktail served and originated in Chile and Peru. This is the version my dad makes all the time.

The mix

Spirit

The Chilean spirit is here in the Pisco, which takes almost 50% of the weight in this drink.

Sweetness

We say we want sugar, so normal simple syrup is here to do the job.

Acidity & Bitterness

Use Amargo Angostura for the bitters.

Dilution

Lemon juice is here, baby! I love citric fruit juice, and everything started here. There is a variety called Limón de Pica — a big lime whose flavor sits perfectly between lemon and lime.

And then there's the egg white. I don't know where to place that in the list, but you need that touch — you know, it has that thing.

Glassware

Serve them in coupes. A coupe gives this drink the presentation it deserves.

Instructions

  1. Mix the Pisco, the simple syrup, and the lime juice together with a lot of ice and give the first shake.
  2. Add a touch of the egg white — the proportion is 1 egg white for 6 drinks.
  3. Shake it!
  4. Serve in a coupe. A foam should appear on top.
  5. Drop Amargo Angostura over the foam.
